Crawfish Pie


This is super easy and you can make it as spicy as you want! My mum made this sometimes with a basic flour pie crust, but I prefer to eat it in a casserole form. You can also make this with shrimp, since crawfish may mot be as readily available to most. *side notes~ you can add more or less onion to suit your tastes. also, the traditional recipe calls for green bell peppers, but we don't like them so I always omit them from my recipes. If you are familiar with creole cooking, you'll know that the traditional mox of onions, green peppers, and celery is referred to as the "Holy Trinity, and is called for in nearly EVERY cajun dish I have ever eaten. Below is simply MY take on the recipe, adjusted to suit my table:) Please add as much or as little Holy Trinity as you like;. Another thing, file is a finely ground sassafrass and you can find it in most supermarkets...if not, Publix will order it for you. They did for me when I lived in Columbia:)*

What you'll need:

1 pound crawfish tails *peeled, deveined*
2 boxes Uncle Ben's wild rice *prepared according to box*
1/2 c chopped onion
1/4 chopped celery
1 can condensed celery soup
2 cans condensed mushroom soup
1 can evaporated milk
1 medium size block velvetta cheese, cubed *use mexi version for a little kick*
2 tbls butter
garlic, salt, pepper to taste
file' and cayenne pepper to taste

What you'll do:

Prepare rice according to box. Set aside. Drain crawfish tails. Saute over medium heat w/ 1 tbls chopped garlic and butter until heated through. Set aside. Combine onion, celery, soups, and cheese with evap milk. Cook over med-low heat until cheese is completely melted. At this point, I add a few dashes of file and cayenne, then stir until well combined.

Place crawfish in buttered casserole dish. I find that it's best to mix in equal amounts of rice and cheese mixture in small bits...makes it easier to stir. Once all of the mixture is well combined, sprinkle with a bit of file...place in the oven and bake for 40 minutes *until the sides are crispy and the top is golden brown* at 350 degrees.

Serve fresh out of the oven with warm, crusty french bread. This dish is VERY filling, so a little goes a long way! You can cut the recipe in half by using only one box of rice, then adjusting the rest of the recipe to suit your taste.

breakfast casserole


I was telling a friend about this casserole last week and wanted to post a pic and the recipe for her. It's one of the easiest breakfast dishes EVER *next to cereal*! It tastes like a sausage and rgavy biscuit...yet creamier, and you can hold it in your hand like a sandwich.

what you'll need:
1 package pillsbury crescent rolls
1 roll of ground sausage
1 package cream cheese *do not get fat free or reduced fat*

what you'll do:
brown sausage in skillet. be sure to break pieces apart into small ground pieces. while sausage is cooking, unroll crescent rolls and layer four slices into the bottom of an 8x8 ungreased glass baking dish. reserve last 4 slices to place on top. when sausage is cooked all the way through, remove from heat and stir in chopped pieces of crean cheese. combine until well blended and cheese has melted. spread mixture on top of prepared dish, then layer the last 4 slices of crescent rolls on top. bake for 18 minutes *more or less until golden brown*, at 350 degrees.

remove from oven, cut, and serve! enjoy!!!

Oi'u

Wow. Haven't done much posting here lately have I? What can I say....a new school year, more work, PTO, picking up Cookie Lee again....the fun never ends! I am going to try to make time for myself and do something I love by blocking out 30 minutes each day to post to my blogs!

I just had to hop on here real quick and say how excited I am to have recieved my Pink Christmas envelope in the mail today!!! YIPEE!! It was stuffed full of cute little things....including a nifty little tin of peppermint lip gloss, YUM! I am very excited to find out who my partner is and to start shopping! This is going to be so much fun!!!!

I will post more info on PC later for all those who are curious:) For now, I have to run to work:)

Butternut Squash Ravioli

My friend Neepa made this for a girls' night dinner at her house a few weeks ago...I loved it so much that, naturally, I had to ask for the recipe! You can find the ravioli in the freezer section at Publix. This dish is very light...summery....and bursting with healthy flavors! The kids really enjoyed it~

Butternut Squash Ravioli

1 bag of butternut squash ravioli
1 small bag of chopped walnuts
2 tablespoons EVOO
2 tablespoons of sage (more if you like)
pinch of fresh ground nutmeg
1/2 cup of reserved water from ravioli

Boil ravioli according to directions on package. Reserve 1/2 cup of the water used to boil the ravioli and place in a deep saute pan. When ravioli is cooked, place into reserved water along with olive oil, sage, EVOO, nutmeg, and walnuts. Cook just long enough to allow the flavors to blend. Serve with a dollop of marinara on top....you don't have to do this, but I love the flavor blend. I used Barilla Tomato and Basil simply because it is my fav! ENJOY!

On my menu this week:

Sunday~ Butternut squash ravioli with walnuts and cream spinach on the side
Monday~ Cube steak with rice and gravy
Tuesday~ Spinach floretine with alfredo sauce and blackened chicken
Wednesday~ Rotel steak and rice with citrus basil asparagus and sweet corn
Thursday~ Homemade eggrolls with white rice
Friday~ cheat night (Brooke's birthday, so we'll just do whatever she wants!)
Saturday~ Fried roast with white rice and sweet peas

I'll post some pics from some of the meals.....probably at the end of the week~ As for now, I have Sunday- Tuesday finished and let me tell you....the butternut squash was a hit with the kiddos!!! I am thinking of toasting it next time and just having them dip it in marinara:)
